Craft gin has taken the world by storm in recent years, and for a good reason. The combination of botanicals and alcohol creates a unique and complex flavour that can be enjoyed in a variety of cocktails or simply sipped on its own.
A Yorkshire Gin Distillery
At Wicstun Distillery, located in Market Weighton, East Yorkshire, we are passionate about producing the finest craft gin using our three small 25l stills. In this article, we will take you through the process of how we make our craft Yorkshire gin.
Step 1: Selecting the Botanicals
What is Gin made from, a question we are asked time and time again. At Wicstun Distillery, we believe in using only the finest botanicals to create our gin. We carefully select our botanicals based on their flavour and aroma profiles, ensuring that we use only the best ingredients. Some of the botanicals we use include juniper berries, coriander, angelica root, orris root, citrus peels, and other herbs and spices.
Step 2: Preparing the Botanicals
Once we have selected our botanicals, we prepare them for distillation. This involves crushing, grinding, or chopping the botanicals to release their essential oils and flavours. We then measure out the precise amount of each botanical required for the batch and mix them together in a large container.
Step 3: Distillation
The distillation process is where the magic happens. We use three small 25l stills, which allow us to produce small batches of gin that are of the highest quality. We fill the stills with a neutral spirit and add our carefully selected blend of botanicals. We then heat the stills, causing the alcohol to evaporate and rise up through the botanicals. As the alcohol vapour passes through the botanicals, it picks up their essential oils and flavours.
Step 4: Cutting
Once the distillation process is complete, we cut the gin. This involves separating the "heads" and "tails" of the distillate, which contain impurities and undesirable flavours. We discard these portions and keep only the "heart" of the distillate, which contains the purest and most flavorful portion of the gin.
Step 5: Dilution and Bottling
The final step in the process is to dilute the gin to the desired strength and bottle it. We use pure spring water to dilute the gin, ensuring that it is smooth and flavorful. We then bottle the gin by hand, labeling each bottle with care.
