What is a liqueur?

A liqueur is a sweetened spirit defined in UK law. The retained EU spirit drinks regulations state that a liqueur must contain at least 100 grams of sugar per litre and have a minimum strength of 15% ABV. Producers create liqueurs by adding sugar, flavourings, or natural extracts to a base spirit. This process gives the drink a sweeter taste and a distinctive flavour. The tradition began in medieval Europe when monks infused spirits with herbs and sugar for medicinal use. Toffee vodka is a modern example. Distillers take neutral vodka and add sugar and natural toffee flavour, creating a sweet, dessert style spirit.
